Imperial Stout aged four months in a Pinot Noir red wine French oak barrel. 10.6% ABV. 65 IBU. Rich, decadent, and full-bodied, this beer features 10 carefully selected specialty malts that each contribute to a deep, complex maltiness. 2,400 lbs of these specialty malts went into this special run, 7 barrel batch split between multiple barrels. Being one of the first three batches we brewed in our new 15 barrel brewhouse in June, this felt like a "crazy" (and crazy expensive) beer to produce for one of our first batches. Hoping to have it ready for the holidays 2020, the timing was almost perfect to release on Thanksgiving-eve.
Smooth and creamy, this Imperial Stout is a warm, calm inducing sipping experience. We brewed this version to be truer to English / Russian Imperial versions of the style.
A bold, malty black beer with rich dark chocolate, berries, sweet coffee, raisiny dried fruit, graham cracker, with with some light fruity esters. Aged in a California Pinot Noir barrel for 4 months, release #1 has a bold malty almost Umami finish mixed with dry red wine character, light notes of sweet berries, and a hint of French oak.
Bottled with very low to no carbonation level allows the thick, rich body of this beer to be expressed in its truest form.
Once this barrel was bottled, our distillery immediately filled the barrel with a freshly run Rum made from Demerara sugar. We can't wait to see how that batch of special rum turns out.

Imperial Stout aged six months in a Bourbon Barrel (13 year aged Bardstown from KY). 11% ABV. 65 IBU. Rich, decadent, and full-bodied, this beer features 10 carefully selected specialty malts that each contribute to a deep, complex maltiness. 2,400 lbs of these specialty malts went into this special run, 7 barrel batch split between multiple barrels. Being one of the first three batches we brewed in our new 15 barrel brewhouse in June, this felt like a "crazy" (and crazy expensive) beer to produce for one of our first batches. First released in February 2021.

Aged in a 13 Year Bardstown Bourbon Barrel for 6 months, release #2 has a bold malty almost Umami finish mixed with mild coconut and vanilla from the American Oak and slight boozy trace of Bourbon.
Bottled with very low to no carbonation level allows the thick, rich body of this beer to be expressed in its truest form.
Once this barrel was bottled, we refilled the barrel with a 12% Barleywine to be aged for another year. We introduced Brettanomyces so the finished product will drink more like a hybrid between an English Barleywine and a traditional English Old Ale.

Imperial Stout aged ten months in a J.M. Rhum Agricole Rum Barrel from Martinique. 13% ABV. 65 IBU. Rich, decadent, and full-bodied, this beer features 10 carefully selected specialty malts that each contribute to a deep, complex maltiness. 2,400 lbs of these specialty malts went into this special run, 7 barrel batch split between multiple barrels. Being one of the first three batches we brewed in our new 15 barrel brewhouse in June, this felt like a "crazy" (and crazy expensive) beer to produce for one of our first batches. This is ready just in time for our 1 year anniversary celebration 7/1/2021.

A bold, malty black beer with rich dark chocolate, berries, sweet coffee, raisiny dried fruit, graham cracker, with with some light fruity esters. Aged in a J.M. Rhum Agricole Rum Barrel from Martinique for 10 months, release #3 has a bold malty almost Umami finish mixed with a slight grassy rum flavor (from the fresh pressed sugar cane from which the Rhum Agricole was produced, light notes of sweet molasses, charred oak, subtle tropical fruit, and a hint of vanilla.
Bottled with low carbonation level allows the thick, rich body of this beer to be expressed in its truest form.

About the styleA bold, malty black beer featuring chocolate, roasty, and coffee flavors with a large range of expressions depending on region and taste. Some, particularly American expressions, will feature substantial bitterness and hop aroma with a less fruity yeast profile, while English versions tend to favor a malt balance with more fruity esters.
Our versionWe brewed ours to be truer to the English or Russian Imperial versions. A bold, malty black beer with chocolate, roasty, and coffee flavors, a hint of raisiny sweetness with with some light fruity esters. We love the base beer that is designed to blend well with specially selected barrels (red wine, bourbon, rum, etc.)
