A pale, bitter table beer with aggressive fruity-spice yeast notes, high carbonation, and prominent bitterness. The profile balances a dry finish with soft, grainy-sweet malt and spicy-floral hop character.
While monastic breweries traditionally brewed lower-strength daily rations, this bitter pale style represents modern taste preferences. Westvleteren first brewed theirs in 1999, but it replaced older lower-gravity products.
Pale yellow to medium gold with excellent clarity and a moderate-sized, persistent, billowy white head with characteristic lacing.
Medium-low to medium-high Belgian yeast character displaying fruity-spicy notes alongside medium-low to medium spicy or floral hops. Low to medium-low malt backdrop with bready, crackery, or honey notes. Fruit esters vary (apple, pear, citrus, stone fruits). Phenols resemble black pepper or clove; bubblegum is inappropriate.
Light, honeyed malt foundation with biscuit, bread, or cracker character. Crisp, dry, hoppy-bitter finish with moderate spicy hop flavor and light-to-moderate phenols. Medium-to-high bitterness accentuated by dryness persists through the aftertaste.
Medium-light to medium body with medium-high to high carbonation, can be somewhat prickly. Smooth texture without noticeable alcohol warmth.
Overall Impression: A pale, bitter table beer with aggressive fruity-spice yeast notes, high carbonation, and prominent bitterness. The profile balances a dry finish with soft, grainy-sweet malt and spicy-floral hop character.
Comments: Monastic origin, rarely found outside monasteries. Highly attenuated, generally 85% or more. Also called Monk's or Brother's beer. Known in the BJCP 2021 guidelines as Trappist Single.
Style Comparison: Resembles a top-fermented Belgian interpretation of a German Pils. More hop-centered than Belgian Pale Ale with greater dryness and attenuation; smaller and more heavily-hopped than Belgian Tripel.
