Roasted Delicata Squash

Delicata Squash is the smaller cousin in the squash family. It's sweet & creamy and roasts up much faster than its bigger relatives.

Ingredients

  • 3 Delicata squash
  • 1 cup heavy cream
  • 1/2 cup chèvre (we prefer Vermont Creamery)
  • 2-3 tablespoons honey
  • 1 recipe of Oat Crumble
  • 1/8 cup finely chopped pistachios
  • Fresh rosemary
  • Balsamic drizzle

Oat Crumble:

  • 1/2 cup oats
  • 1 tablespoon maple syrup
  • 1/4 tsp cinnamon

Sweet & creamy

Delicata Squash is the smaller cousin in the squash family and its size and shape make it a very attractive squash to work with. It’s sweet & creamy and roasts up much faster than its bigger relatives. This recipe can be made for a salad course or a entree… 1-2 slices for an appetizer or 4 for a full plate. It can accompany a cider brined pork loin, a balsamic chicken… hearty fall flavors to support the sweet creamy flavor.

Using the ingredients list above, cut squash into 1 inch slices and deseed. Toss slices in bowl with vegetable oil, salt & pepper. Lay on baking sheet and roast for 18 minutes at 350 (high fan if possible)

Whip heavy cream until stiff peaks. Soften chèvre in microwave safe bowl on med power. Beat gently until smooth. Fold softly into whipped cream.

Remove squash from oven. Brush one side with honey and dip in oat crumble to cover edge. Arrange 4 pieces per serving on plate. Pipe or spoon chèvre mixture into center of squash. Sprinkle with pistachios and  rosemary. Drizzle decoratively with balsamic drizzle. 

Chef’s note: If you have access to a deep fryer… fried rosemary adds a delicious flavor.

Mouthfeel – Soft, Combined with other ingredients very juicy with slightly crispy consistency.
